Health Break: Finding a Healthier, Stronger Me

I’ve been wanting to talk about health on here for quite some time, now, but my journey in finding the healthiest, strongest me is a long one…and a very long story, as I’m still finding my way back to it.

As a former competitive athlete, I got a pretty major shock, a few years back, when I was diagnosed with a heart condition. I had been in great shape my whole life until my condition started to take its toll on my performance level, eventually ending my competitive career and life as I knew it. It was a very confusing time and took five years to finally diagnose (but I’ll get into all of that another time).

I’ve since struggled to find balance with my health and struggled to find the strength to start reclaiming control. My fears and anxieties of what could potentially go wrong, landing me back in the hospital have held me back from taking action. But, I’m ready to move forward and leave all of that struggle and
confusion in the past.

I just keep asking myself, “If not now, when?” No one else can do this for me; I just have to stick to it and know that everything will be worth it in the end. That’s why I’m sharing this, now. I figure that if I can get it out and write about it, I can somehow keep myself in check.

So, this journey to self-improvement and longevity starts with a healthy diet. I have no intention of depriving myself of any indulgences; that’s just ridiculous! There are too many wonderful things out there that I don’t want to miss out on!

No, it’s about portions, eating the right foods and eating enough of the right foods. Thankfully, I’ve always had a healthy relationship with food and a keen understanding of nutritional value from my days as an athlete. This will be the easiest part for me.

So, for now, I just want to start by posting some of my go-to meals and recipes, like this perfectly simple and delicious breakfast. I call this one the Eggy-Thing. Why? I guess just because I wasn’t in a particularly creative mood when I started making it in high school, which, fyi, was before hipsters and foodies developed a weird obsession with liking things like avocado and toast. Seriously guys?  Like, why is that cool??

Ingredients

  • ½ English Muffin (or whole if you want a larger breakfast)
  • 1 Egg (or two, again, if you want a larger breakfast)
  • ½ Avocado
  • Extra Virgin Olive Oil
  • Salt, Pepper and Basil to taste

Directions

  • Toast your English Muffin.
  • Poach your egg.
  • Add your ½ avocado (sliced) on top of your toasted muffin, and drizzle olive oil on top.
  • Add your poached egg on top of your avocado and toasted muffin.
  • Add spices to taste.

It couldn’t be more simple! Plus, it’s delicious and nutritious!

I like to have mine with some mint tea and whatever fruit I have lying around.  More to come!
